Re: Good Morning

Gordon'daughter works for the NHS and she's been prebooked for Pfizer vaccine, however, like you she has allergies, so she's got to consult with her GP to see what he advises. I'm allergic to dust and some pollens. Gordon is allergic to penicillin and they still did his. Glad to hear you're feeling a bit better hazel. What an awful Christmas you've had. Can I have the recipe for the wartime fruit cake please Hazel?

Re: Good Morning

Good morning all.  Starry as your mother is over 80 and suffering from cancer she should be a priority case and one of the first to be vaccinated.   Good news this morning a third vaccine has been passed for use in this country. I think the Government pre-ordered 17 million of them. You can find the nearest centre who are currently doing vaccines. They are also supposed to be made available at some Doctors surgeries. Letters will be sent with appointments.  A very cold and frosty day here too. I was going to sort out the sideboard in my sun lounge but it's far too cold out there. I'll do some sorting out in my bedroom instead. Have a good day all.

Re: Good Morning

Afternoon ladies. \

They told us snow today, we've had blue skies and sunshine and a balmy 6C. pffft....

Carol here's the wartime cake recipe, its really lovely and keeps up to 6mths. Not that mine will I've eaten half of it already LOL

Wartime Fruit Cake
380g mixed dried fruit
50g golden caster sugar or soft brown
1 large beaten egg
225g self raising flour
150ml of hot black tea
1tsp ground cinnamon (optional)

Place the dried fruit and sugar in a bowl and pour over the hot tea to just about cover the fruit. Give it a stir to dissolve the sugar and cover with a plate and leave overnight.

Preheat oven to 170C (Fan 160C) Gas 3.

Add the beaten egg to the dried fruit mix and sieve in the flour. Mix well. Transfer the mixture into a 2lb loaf tin or a 2lb silicone loaf tin. Place on middle shelf of oven and cook for 1 hour and 10 mins. Test if done by inserting a knife, if it comes out clean the cakes done, if not give another 5 mins.  When cooked turn out onto a wire rack to cool.   NOTE:
Select your own dried fruit mix: Cranberries, mango, dates, figs, sultanas, currants, mixed peel, glace cherries.  Or the ready prepared mixed fruit. If mixing your own make sure it comes to 38g.  For a boozy cake, supplement half the tea for half brandy, whisky or rum. You can also turn the cake upside down when cooked, stab the bottom all over with a fork and drop 2 tablespoons of alcohol over it. Leave it to soak in for an hour still upside down. When cool wrap in greaseproof or foil and store in an airtight tin or container.

Re: Good Morning

Hi, Hazel, Thanks for the recipe I'll give it a try. Haven't made a cake for years so will be interesting to see how it turns out. Gordon's doing a stir fry tomorrow night so I'll make the trifle I was going to make on New Years Day. I was hoping to do some sorting out in my bedroom but after doing the washing up and putting some washing away I wasn't feeling up to it.  Gordon also wasn't too good so we watched a film instead. Perhaps tomorrow will be better.

Re: Good Morning

I fancy that cake too. Thanks Hazel. Not sure how it can last that long without fat though. Wouldn’t last that long here though so will never be tested

Re: Good Morning

Afternoon everyone.

I've got loads of fat free or extremely very low fat cake recipes. I'm posting one a day on Twitter. Started with the Wartime Fruit Cake, then Lemon and Raspberry Drizzle cake, Fat//Low Free Carrot Cake, No Fat/Low Chocolate and Banana cake, and today is No/Low fat Brownies I think.

If anyone fancies one of those let me know and I'll post it up here.

My Asda fortnightly grocery delivery came today, bought toilet rolls for the first time since Feb last year LOL Also bought tons of dried fruit, figs, prunes, dates, apricots, cranberries, etc. And managed to get some SR flour, I did have some in but wanted to top it up as I'm cooking cakes. I got the plain white bread flour too, which is a miracle, it's been out of stock for ages. I mix it with wholemeal bread flour to make a 50/50 loaf in the bread machine which is really nice.  Also had run out of wild bird food, so had seed, and suet pellets. I get the peanuts every month from Amazon as it's cheaper, but the fat balls are a bit dearer so try and get those from Asda if I can but they were out of stock this time.

My cars being serviced on 13th they come and collect it and then bring it back when it's done. It's first MOT is due in 2 months so I will ask them if they'll do that at the same time to save all the faffing about with wiping it all down inside when I get it back. They do wear gloves but I don't think they wear masks when they drives they'll be breathing all over it.

I've decided not to watch the news every day as I normally do, it's too scarey and I get stressed out. Even though I know I'm safe as long as I stay at home and do the usual hygiene routine. My friend in Yorkshire was in a right state the night before last, she'd seen the news and got so scared she had a massive panic attack. She already suffers with a very slow heartbeat and low blood pressure, and she's been having chest pains for the last few days. I told her not to watch the news anymore. She's like me, lives alone, no kids, and no family or nearby friends. She feels very vulnerable if she feels unwell, and dreads having to go to hospital in an emergency. Being in the same boat,  I do understand exactly how she feels. Bless her. There must be thousands of people like us in the country.

Right, I'm going to have a no fat yoghurt now I've had lunch and then get some graphics down for the monthly XPets adventure tonight.

Keeps safe everyone! x

My problem is reactions to meds so I suppose the doc will hopefully discuss it with me. I also have asthma, underactive thyroid and BP problems, but I don't think they are anything to worry about with having the vaccine. Thank goodness.

Looked on the vaccine calculator and vaccines should be available for me here end of Feb beginning of March. Bet it's a lot later than that in reality.

Re: Good Morning

Haze,l can I please have the recipes for, chocolate and banana, raspberry and lemon drizzle cake and the low-fat carrot cakes. I had a very good night's sleep last night, but I'm feeling really hungover today so sleepy. I can do with some fresh air I'd love to sit the car on the seafront. Sadly we're not allowed to do that.  Gordon was feeling cold so he keeps turning the heat on, I get hot at 20, he'll say it's comfortable at 25. This is probably what's making me tired. He's been nodding off all afternoon as well. Another day with no progress!

Re: Good Morning

Good morning everyone.

Another cloudy, damp            murky day.

The cleaner is coming today and I've got WI Zoom tonight doing Chair something or other exercise Yoga or Qi Gong.

No sign of a vaccination for us yet but I hear that the vaccinations are going well and smoothly at the local hospital which is good to know.        I'm not sure if I'll be pleased to have it or not.
